Elderflower Cordial with Dried Edible Elderflowers

Elderflower has such a fleeting summer season.  This cordial is a wonderful way to capture a taste of the summer with our year-round supply of Dried Edible Elderflower. You can then sip away at the flavour of better times all year long.
 
4 cups water
4 cups sugar
1 jar (1/2 cup/25g) Petite Ingredient Dried Edible Elderflower
2 Meyer lemons
3 teaspoons citric acid powder
 
In a large saucepan bring the water and sugar to a boil over medium heat for approximately 5 minutes until the sugar dissolves.  Remove from heat and set syrup aside to cool.  Wash and slice the lemons and place lemon slices, Petite Ingredient Dried Edible Elderflower and citric acid powder in a sealable glass jar.  Once the syrup has cooled completely, pour it into the glass jar, seal, and shake. Store in the refrigerator for 1-3 days (a minimum of 24 hours).  The longer it steeps, the more intense the flavour will be.
 
Once steeped, strain the cordial through muslin cloth into a steralised, sealable glass bottle or jar, being sure to press and extract all the liquid as you strain it.  Seal and store in the refrigerator for up to three months.
